Molasses Caramel Corn (V, GF)
Ingredients
8c popped popcorn (about 1/3 to 1/2 cup of kernels)
1/4c molasses
1/4c maple syrup
1/4c water
1/4t sea salt
1/2t vanilla
1/4t baking soda
Instructions
Preheat oven to 250F
Place popped popcorn in a very large pot or mixing bowl
In a heavy pot stir together the: maple syrup, molasses, water, and salt. Bring to a boil over high heat and stir from time to time until the temperature reaches 250F.
Remove from heat and stir in vanilla (it will sputter) and baking soda
Pour over the bowl of popcorn and mix gently with a rubber spatula (avoid crushing the popcorn)
When the popcorn is well coated, scrape mixture onto a large parchment paper-lined baking sheet
Spread in an even layer and bake at 250F for 45 mins, mixing every 15 mins.
Cool before eating
